I don't think that I have watched an anime that takes place in a Asian country that is not Japan (like Korea, Thailand and Philippines for example)
I also do find it weird since there are a lot that do take place in America and the UK

So can you guys think of any?

There are many anime based on Romance of the Three Kingdoms and are set in China.

There has also been a wave of Chinese produced anime with many set in China, such as Bloodivores.

What might explain it are present and historic tensions (what I call "hurt feelings of the past") between China and Korea and Japan. Younger people aren't so nationalistic generally, but some in the older generations still hang on to the greivances and resentments of their ancestors.

I think these tensions can inhibit cultural crossover in southeast Asia...
