series
Mobile Suit Gundam (has issues, but you should watch it if you're gonna get into the Universal Century timeline)
Mobile Suit Zeta Gundam (sequel to MSG, excellent)

OVAs
Dallos (can be found here on CR)
The Guyver: Bio-Booster Armor
Baoh: The Visitor (yes, do watch this one)
Mobile Suit Gundam 0080: War in the Pocket

Ghibli films - must see
Nausicaä of the Valley of the Wind
Castle in the Sky
My Neighbor Totoro
Kiki's Delivery Service
Grave of the Fireflies

films
Vampire Hunter D (1985)
Wicked City
Mobile Suit Gundam: Char's Counterattack
Crystal Triangle (not sure if i can really recommend this, but it has its moments)
Demon City Shinjuku
Birth (aka Planet Busters. not much of a story, just 4 people trying to save the world and fighting a nonstop stream of bigger and bigger robots. friggin awesome.)
Venus Wars

Second this list!

I'd throw in Green Legend Ran, Lily C.A.T., Ghost in the Shell, Blue Seed, and Serial Experiments Lain just for nostalgia.

Macross and Bubblegum Crisis are very musically driven.

What's your tastes? There's some really crappy old anime and some good stuff, and depending on your preferred genres I might be able to match up something...

Urusei Yatsura, City Hunter, Maison Ikkoku, & Legend of The Galactic Heroes are already on the list.

And speaking from experience, btw--The first season of Urusei was so badly done, compared to the later series, we've lost more first-timers that way, who say "Is the rest of the series like this??" No, it isn't.
(Starts with just transcribing Rumiko Takahashi's manga stories, and then...finds its own crazy direction.)

If you're going to start with UY, watch the first episode, and then skip over to the end-of-the-first-season recap episode--the "Spring Special", if you can find it--and pick up again around the mid-20's. You'll be glad you haven't missed much.

The BEST Takahashi story based anime series is Mermaid Forest. It's short and sweet and is completely different from the groundhog day "will she/won't she" romance stories that she wrote.

FFS!!! Ranma, Maison, and InuYasha just went ON and ON and ON.....

Also, why has NO ONE suggested Dominion Tank Police???

Are the "anti-tank weapons" a bit too um... "masculine"?

XD

Also Pet Shop of Horrors is good, On CR, they have Parasite Dolls, which I liked.

Not 80's or 90's but if you can find it, watch Paranoia Agent.

Personally, I'm trying somewhat to watch Key: The Metal Idol, but it's hard (too many distractions). I've been meaning to see it for ages, but never really got around to it.

Sol Bianca was also interesting and in line with some of the recs given here.

Will try to give it a bit more thought...
