my husband & i both love horror & gore anime, but we've only found a few. if you have any recommendations, that would be greatly appreciated!
the more gore, the better. the scarier, the better.

the scariest to me was Higurashi, although haven't seen many other similar shows

Some of the crazy popular shows like Attack on Titan, Parasyte -the maxim-, and Tokyo Ghoul have a fair amount of gore and/or body horror. Then there are shows like Terraformars, Hellsing Ultimate, Blood +, Higurashi, Shiki, Dusk Maiden of Amnesia, Deadman Wonderland, Another, Elfen Lied, Gakkougurashi!, Mnemosyne, Monster, Gantz, Claymore, and Corpse Party that aren't as obscenely popular, but still have a good amount of gore and/or horror that they pull off pretty well.

I agree with Higurashi and Another! Those two were amazing ~ Also, for the horror aspect you might enjoy Yami Shibai! It’s short episodes, but there’s a lot of really good stories!

Kara No Shoujo It's not an anime like you requested but a visual novel. It's about a private detective, Reiji Tokisaka, that is investigating a string of grotesque murders in post-World War II Japan during 1956. Sorry if u wanted just anime I had to mention it

Here are some that haven't been mentioned yet.

Kagewani and it's sequel, Kagewani: Shō, is a pretty enjoyable horror series with a unique papercraft-like animation style. It took me a few episodes to get used to it, but the story is good enough to pull you along and it can get pretty damn creepy. Kind of X-Files meets anime in search of monstrous cryptids.

Guyver: The Bioboosted Armor is a solid, gory sci-fi action series with plenty of horror elements. It is also available on this site: http://www.crunchyroll.com/guyver-the-bioboosted-armor

People have already mentioned the Junji Ito Collection, but there's also the OVA Gyo.

Jigoku Shoujo aka Hell Girl is another fun one. The plot is centered around people striking bargains for revenge at the cost of their souls.

Shiki is a vampire horror anime, I thought it was pretty good. The vampires are pretty creepy looking too. (one of the main characters)
