It'd have to be a tie between Code Geass and Gundam Seed. Geass is just amazing, while Gundam Seed has a special place in my heart.

If it's irreplaceable becase of the effect it had on me, then Dragon Ball Z for sure. It was the first anime I watched as a kid, and the first anime I rewatched (which later got me into more anime). I met my best friend of 13 years (who I still talk to all the time) because of DBZ. Sure, we might have been friends without it, but I wonder if we'd be so close without it. It really did change my life in some ways.
If we're talking just storyline, easily Clannad. A show has never made me feel so many emotions before. Even now, I could go back and rewatch it all over again and fall in love with the characters. Easily one of my favorite shows of all time (and one of my favorite animes next to Cowboy Bebop and Samurai Champloo).
