The first few episodes of Blue Exorcist were rather boring to me, and I wasn't really enjoying it that much, but then things really started to pick up and it's now one of my all-time favourites. I sure hope it gets a remake that is more faithful to the manga one day (like they did with FMA).
Toaru Majutsu no Index also started out rather boring, but got interesting later.

I usually wait to declare an anime boring until the 3rd episode, or 6th if it's a longer (20+ episodes) series. And if i'm bored at that point the odds of me continuing to watch are pretty low.

I found Fate/Stay Night to be an awful combination of boring and annoying early in the series, and while it never really completely lost its annoyance factor (thank you Mr. Shirou) it got a lot more interesting as the plot started to unfold. It still didn't live up to my expectations, but it was decent and I probably wouldn't have been introduced to the Fate series if not for Fate/Stay Night so I can thank it for that.

Unlike Fate/Stay Night I which I had high hopes going into I went into Strawberry Panic expecting nothing, and for the first couple of episodes I got exactly what I expected, a whole lot of slow paced nothing. Like a tumor though it grew on me and as more side characters got fleshed out I got more and more interested until I actually started to care about the ridiculous little series. I still can't explain just what it is about Strawberry Panic that makes me enjoy it so much, but for some reason it's become one of my favorite so called "guilty pleasures".

D Grayman and Katekyo Hitman Reborn. The first few episodes was boring that i ended up falling asleep. But after that the plot got so interesting that i got so hooked i ended up watching the whole series. Never had i imagined that i would end up w/o sleep the next few days.Lol... goes to show that you can't really know how awesome a series can be unless you watch it through the end...

I' d say... Steins;Gate. Something about the promotional art and the premise kept me watching.

By the end of the show, practically everything is explained; the long, seemingly useless first eleven episode are justified, too.
It's my favorite anime.

Reborn and D.Gray-Man, I didn't particularly enjoy either of them until much later in the series.
