Nisekoi for sure, but I prefer they wait till it ends and do a proper adaption.
Mahou Sensei Negima. I want the real story line. The middle school ecchi time pretty much completely ended in the first ark, but all the adaptions just focus on that and other random bull crap.
I would like to see History's Strongest Disciple Kenichi continue. They ended it before the story and fights really started to pick up. Post Ragnarok is so good.

Although I have a feeling none of them would translate well into anime, I would say anything by Kaori Yuki. Fairy Cube in particular could be absolutely beautiful if it were well animated.
(I know there is an Angel Sanctuary OVA in existence, but, from what I hear, it's not very good.)
