First off maybe some (a lot) of you don't know what cordycepts are.
It's a fungi that grows on insects and takes over they're brain and kills them and then infects some more.

how they infect:
They grow the fungi out of the victims head and when full grow launches out spores which all of the victims species in the vicinity will be infected

Here's a video if you don't know what I mean

Cordyceps has also proven to be an excellent strengthening tonic for convalescing patients, and patients with reduced appetite and/or weak blood. Patients who have a weakened resistance to respiratory tract infections and/or susceptibility to colds or flu can take cordyceps to strengthen resistance to such ailments. In various medical studies done in China and Taiwan, the effective rates were among 78%-94% in the treatment of malignant cancers, heart diseases, leukemia, hepatitis b, diabetes, lung diseases, bronchitis, nasitis, tinnitus and cirrohsis.

the question I'm asking is by China's researching and experimenting, can they biologically mutate the fungi causing it to effect mammals and eventually humans?

I doubt that they can infect the human brain system.
Even though it is possible, there are ways that can prevent that kind of thing from happening.
Likewise, there will always be a cure for those kind of situations, although I'm not quite sure how we can cure this one if it happens.
Basically, all I'm saying is that we can prevent it. Besides that, I haven't heard a report about this situation yet.

That's freaky. But getting it to affect humans won't be child's play.

I watched this on Planet Earth. It was my favorite episode except for the birds of paradise. It's really surreal and creepy. I think that's how the T virus would be if it existed.
