None, really.
I mean, if they never ended, wouldn't that just ruin the whole story? I hate taking an interest into an anime but ending up as a disappointment after 50 episodes and still no ending. And it still goes on and on until you're not even sure of the whole point of the anime.
But, there were a few endings which were questionable and coherency was needed. Or were just plainly unfinished. I have a whole list of them (perhaps most were mentioned) but my brain's dead. So, perhaps I'll edit this later.

It is okay when an anime ends as long as it ends on a satisfying note. Animes that i wish didnt end but have so far are
Eyeshield 21, they should finish it now that the manga has ended
Inuyasha - but their finally getting around to that

what gets me most mad is when the anime stops while there is still more manga, now i dont mind that they take a break from the anime while they wait for the manga to finish, but it sucks so much when the anime just stops and your like uh.... what happened... finish the story!! dont leave me hanging here. I would rather have them hold off and wait for the manga to get further ahead than have fillers like Naurto and Bleach. Fillers are a pain in the neck, unless its fillers like Gintama, because I am not sure what the plot is, but its just pure random epic comedy and action.
