I think you are refuring to a canon moment, which is a saying from the canon camera's. it basically means, "picture perfect" hope that helps

in the anime, Kanon, it was just referring to pachelbel's canon - you hear it in the background when they are in the cafe.

I think you're confusing it with the name of a popular drama/romance anime back in 2006, entitled KANON. It's a romanji form of the word "Canon", which simply refers to a type of musical movement where a certain melodic train overlaps the same melody, but at different instances (or points of time). The most popular canon is perhaps Pachelbel's Canon in D major, although the overlapping trains aren't that obvious.
