It think the one with neji and hinata cause it is a family feud and it says alot about their fight style with is different and it shows family problems and alot more then an average fight or that is what i think

I would say in the preliminaries that i found Shikamaru against that female sound nin most interesting. Getting some indepth on him, and that continues in the finals and in the pursuit of Sasuke after that.

Shikamaru vs. Temari
That is one of my favourite fights in the entire series, considering that Shikamaru is my favourite character.
So much is learned about him in this fight.

I'd vote Lee vs. Gaara, showed off Lee's true abilities, as well as how sturdy Gaara really is, as a punching bag anyway.
