Recently hooked on Gintama but I'm nearing where the CR subs available end. Can I skip to the newer episodes? Rather, does the style remain self-contained episodes or does it become a series of story arcs later on?

It becomes more of a series of arcs after the benizakura arc. However, most add nothing to the plot... I suggest dling/watching fansubs till at least 105 (only up to 107 in good quality, some of others in poor quality), then you can skip with ease to 129.

The arcs are more to contain some important plots like new character appearances, related to the past, new friendships build, so on...
Gintama is a lot episodic but still try not to skip because some episodes are arranged according to timelines.

Uh... it's fairly episodic except for the arcs, and even those are "one shot" arcs for the most part. Characters will appear later but it's not hard to figure out what's going on. You can skip around, just avoid Yoshiwara until you've seen the other serious arcs too (Benizakura & Itou/Shinsengumi Disruption) - those actually DO have an specific order.

Gintama is mostly episodic except for the Arcs but it does take note of what happened in the previous eps.
