I like a lot of episodes so it's hard to single out any one in particular. The whole show is great.
But Cartoon Wars and the Imagination Land episodes were really hilarious.

ooooh so many. Pinkeye (first season Halloween special), SpookyFish (season 2 Halloween special with the evil twins), Gnomes (Underpant Gnomes!!), Chinpokomon, Towelie, The Lord of the Rings ep. when they had the porno movie instead, Good Times with Weapons (the one drawn in anime style), The World of Warcraft episode, and Scott Tenorman Must Die.

I love the one where they pretend to become ninjas, I think. Then Butters got hurt really bad and Cartman thought he really had invisibility powers and went naked in front of everyone.

One of the most recent episodes with Awesom-O and Butters becoming a pimp were really hilarious.
But as others have already said before me the show has so many great episodes, there are too many to mention.
World of Warcraft episode was really good too.
