Wow. Almost everyone answered dim sum and a bunch of things I don't think are really Chinese (Crab Rangoon?! and Hainan Chicken Rice, well, it came from China originally but it makes me think of Singapore). I'm glad a few people answered noodles and 北京烤鸭 (Peking duck). At least a few 北方人 (Northerners) out there...

The first thing I think of with Chinese food is 蝎子 (scorpion). Ha, no, I am sure it is more of a tourist thing, but they were very sweet and crunchy:


Mostly I think of freshly hand-made 面 (noodles):


And other peasant food: 饺子 (dumplings),鐵板牛肉 (sizzling iron skillet beef), 二锅头 (either an alcoholic beverage or toilet disinfectant, not really sure after drinking). Mmm, hungry now:


I also think about 四川 food. I love anything with the numbing peppercorns, like the dish where they cook a whole fish and serve in a giant glass bowl of oil -- don't have a photo of that, sorry, but it was damned impressive. I don't have as much experience with Southern food, having never been to southern China.
