snow_san's kare rice (jpn curry rice) 101!!

Curry (カレー, karē) is one of the most popular dishes in Japan. It is commonly served in three main forms: curry rice (カレーライス, karē raisu), karē udon (thick noodles) and karē-pan (bread). Curry rice is most commonly referred to simply as 'curry' (カレー, karē).

A wide variety of vegetables and meats are used to make Japanese curry. The basic vegetables are onions, carrots, and potatoes. For the meat, beef, pork, chicken and sometimes duck are the most popular, in order of decreasing popularity. Katsu-karē is a breaded deep-fried pork cutlet with curry sauce.

snow_san's ingredients: 2 onions, about 7 carrots, 3 potatoes, beef already cut up as pictured, box of roux (curry) and rice.
note: apples can be used too!! and green peas!!

Curry sauce (カレーソース, karē sōsu) is served on top of cooked rice to make curry rice. Curry sauce is made by frying together curry powder, flour and oil, along with other ingredients, to make roux (ルー, rū); the roux is then added to stewed meat and vegetables, and then simmered until thickened.

(left) is an instant that you just heat in hot water or microwave and pour over rice.
(right) is what we'll use. it's a box of roux. you'll see different brands and they usually come in three tastes (mild, medium & hot). (picture below is what the roux looks like). it'll give our kare rice it's color and thick, spicy & delicious taste!!

In Japanese homes, curry sauce is most commonly made from instant curry roux, which is available in block and powder forms, and contains curry powder, flour, oils and various flavourings. Ease of preparation, and the wide variety and availability of instant curry mixes, has made curry rice very popular, as it is very easy to make compared to many other Japanese dishes. Pre-made curry is available in vacuum-sealed bags that can be reheated in boiling water. Vacuum-sealed curry sauce, prepared by heating the pouch in hot water or the microwave, is also popular.

the roux comes in 2 packets. i'll be using both packets (whole box).

carrots take a bit of time to cook, so keep the cuts small.

potatoes on the other hand, take less time to cook so make the cuts bigger.


note: when i'm makin kare rice, i typically will just make a big pot that'll last a few days. this pots size is 6 QT / 5.7 LTR
fill the pot about half way full of water. add all the meat and cook at medium. water will become dirty as pictured and you'll want to scoop to try and keep it clean.

in the end, i'll still go ahead and pour all the water out and refill again about half way.
NOTE: VERY IMPORTANT!! rule of thumb. better to have less water than more!! you can always add more water later anytime! too much water and you've got soupy kare rice.

with the heat still at medium, add your carrots and just let cook. you can poke the carrot with a chop stick to see if/when if gets soft.

alright, while the meat & carrots continue to cook. let's do our rice.
note: 1 cup of rice = 1 cup of water. it's that simple.
decide how many cups of rice you want to make. 1~2 cups for 1 to 3 people. 3 cups or more for 4 or more people I'd say.

so add your cup(s) to the bowl, add water and mix the rice around with your hand.
pour out water, add more water, continue this step over and over until the water's clear (clean). note: this can take a while! as you're doing this...

carrots will start to soften. let's go on and add the onions.

and you can go ahead and add the potatoes too.

let it all cook for a bit, then go on and add half (1 packet) of the roux (curry).

stirring slowly.

and go ahead and add in the rest of the roux (remaining packet).

now depending on how hungry you are at this point. you can leave the heat on medium or you can cut the heat back a bit and let it slowly cook. go ahead and throw the lid on, stirring occasionally. you'll notice the roux work it's magic as it becomes thicker.

alright. once the water looks clean enough, slowly pour it all out (right till the last drop!). now pour in the amount of water equal to how much rice you did! so if you did 1 cup of rice, then do 1 cup of water.

cook!

continue slowly stirring...lookin good!!

rice done!
when you open it, let da steam evaporate a bit. then i like to mix it a little. break up any stickiness.
shut da lid or let it sit a bit b4 serving on dish.

kare ready!!

typically you'll serve da rice on one side with the kare on other!! makes 4 nice presentation!!
that's not 2 say u can't just pour the kare over da rice!!



or u could serve like dis!!




furikake!!

Furikake (振り掛け/ふりかけ) is a dry Japanese condiment meant to be sprinkled on top of rice. It typically consists of a mixture of dried and ground fish, sesame seeds, chopped seaweed, sugar, salt, and monosodium glutamate. Other flavorful ingredients such as katsuobushi (sometimes indicated on the package as bonito), salmon, shiso, egg, powdered miso, vegetables, etc. are often added to the mix.

Furikake is often brightly colored and flaky. It can have a slight fish or seafood flavoring, and is sometimes spicy. It can be used in japanese cooking for pickling foods for onigiri, or rice balls.

Outside Japan furikake can be found in most Asian groceries, near the katsuobushi; or in the ethnic food aisle of some major supermarkets.

I always make bento to bring it to skol and share with my tomodachi~

But I dont hav the piccu cuz I always prepare it in morning before went to skol >,<

hmmm... closest i can think of is it looks kinda like kamoboko!!
kamoboko has a kinda spongy taste 2 it!! sometimes u c in noodle soups like soba!!
but u can eat by itself 2 i think??!! maybe dip in a lil soy sauce?? or some kind of sauce...i dunno..

well u saw they've the instant kare rice!!! u just boil in hot water & pour over rice!!
then we've got the instant miso soup 2!!!
if/when u go 2 asian market/store!! just ask who ever works there if they can make some
suggestions on some easy 2 prepare stuff!!

course i'm sure u won't need any help on da candy aisle!!!
