Gokusen (oh, so funny), Twelve Kingdoms (it has an end, but also doesn't), Stellvia (though, the main character will get on your nerves for crying so freaking much!!), and that's all I can think of..lol.

I second that one I wish they would have finished! The light novels were continued and translation are floating around out there.

Also the idea of not as well known has a lot to do with where you get your anime. I haven't the faintest idea what is well known or not (except for Naruto, Belach, Vampire Knight, Chobits etc). Usually licensed is better known b/c of the marketing it receives.

Ultraviolet Code 44 isn't a wonderful anime, but good enough that it should be subbed. Genetically modified girl assassin vs. everyone else.

I found Argento Soma interesting (horrible sound track and the main characters angst got old). It's about how pointless revenge is and the need to move on. Setting is a special air force squad and a girl who has a big mecha friend.

I liked Yukikaze quite a bit (the men were a little effeminate though): Never seen so many cool jets in the sky at once. Cool graphics even though its old.

I liked Hainbane Renmei (spelling?), a story exploring what matters about people and the importance of these things in light of life and death

Heroic Age was decent. Silly in places, but decent.

Kannazuki no Miko: I think it was this one (?) I do remember it was mildly yuri, but focused a lot on the relationships and understanding one another.

I generally like the Keras movies. Sword wielding demon slayer.

Kino's Journey
for literature majors. Actually has well thought out plot lines that discuss communism, eugenics etc.

Lunar Legend Tsukihime: I think its by the same people who did Fate/Stay Night. Its about vampires, and a boy who can see the lines in all creation. If he cuts these lines whatever it is irregardless of size or composition is destroyed. When he kills the vampire she comes back to life and isn't so friendly about it.

Most people probably know Mohoromatic. Decent for its time. Combat butler femme bot show

Noir: I remember liking this when it was out. Two Assassins team up, but one says they wants to kill the other (leaves you wondering if they really will since they eventually care for each other).

Persona Trinity Soul: Obviously based on a game, but I found it interesting. Peopls souls? turn into Mecha's

Rahxephone: people probably know of this one. Another mecha sort of Evangelion like.

People probably know Ride Back: It was interesting.

I'm going through a list and there is an anime called "Samurai Pizza Cats" who knows???

I remember like Simoun: About War, friends, flying aircraft, kind of a coming of age series.

Again not necessarily great anime's but things I think are not as well known that I enjoyed.
