This isn't a list of favorite bands or artists necessarily, just people who's vocal talents I appreciate. I judge based not only on talent, but on distinctiveness of voice and all that good stuff. Maria Callas is probably the most talented person on this list, but that certainly doesn't prevent me from enjoying someone like Johnny Cash. This is also a random sampling of what comes to mind.
Maria Callas, Anna Netrebko, Cecilia Bartoli for Opera
Billie Holliday and Ella Fitzgerald for Jazz
Frank Sinatra and Dean Martin for lounge lizard type stuff (plenty of others come to mind, but they sum it up nicely for me - that the rat pack were badasses back in the day)
I'm a pretty big Loreena McKennit fan, though I suppose that would be classified as world/celtic music.
Johnny Cash is awesome beyond description.
I also enjoy Sarah McLachlan quite a bit as far as pop goes. Stevie Nicks fascinates me as well. I just started listening to the Dresden Dolls and I find them quite fascinating. Jewel and Dolores O'Riordan (the cranberries) are good too. I also enjoy Bjork... such a distincitive chaotic voice.
Quite a few male pop/rock artists I enjoy and appreciate, but I'd have to say some of my favs are Elvis (say what you will, the man had an amazing voice), Robert Smith (the Cure), David Bowie, Robert Plant (Led Zep), Lane Staley (Alice in Chains), Billy Corgan (Smashing Pumpkins), Freddy Mercury (Queen), and well I'll add more later if they pop in my mind. Oh Bob Dylan. Sometimes (though certainly not always) the lack of training and quality adds a character that you can't get elsewhere.
Metal... that's a different animal. Garm (Ulver and Arcturus) is fucking amazing. ICS Vortex (Borknagar/Dimmu Borgrir) is good. Call me crazy, I like Dani Filth's (Cradle of Filth) screeching - it just sounds so delightfully nasty. Karl Sanders (Nile) is an amazing death metal vocalist. If death metal had a bass, he'd be it. Also, Lord Worm (Cryptopsy) great for grindcore/death metal vocals. King Diamond is awesome for the other other of the spectrum. Bruce Dickinson (Iron Maiden) is great for mainstream metal.
Only vocalist I've been genuinlely impressed with from the land of the rising sun is Gackt. His work with Malice Mizer is gold, but his solo stuff is hit and miss. Still great though. I enjoy Kotoko and Ayumi Hamasaki quite a bit as well.
I've recently stumbled into jazz and I feel like I've found a treasure chest. I've got quite a bit to learn, but it's all quite fascinating. I'm begining to understand why people call it "America's classical music."
