That's a hard one. I really enjoy Lord of The Rings, and Star Wars.
But I must say, I enjoyed some of the Resident Evil trilogy.

I'm sorry, but I can't take the Matrix trilogy seriously. Anyways, I liked parts of most of the trilogies on here. I love LOTR and Star Wars, and Alien is decent (Minus that third one that I like to pretend never happened). Indiana Jones is also great.

If you go by impact, Star Wars (original). Seriously, Star Wars was (by far) the most important trilogy ever.

Now, for personal "best":

Star Wars
LotR

I only included these two. Why? Well, I gave myself criteria. I wanted a series that had no let down - where all three movies were great. I also wanted a series that would stand the test of time. These two qualify, in my book.

Matrix? What? Errr...

And Spiderman? Do we need to talk about the third film?

Speaking of third films, X-Men? Ugh.

Thus, I came down to Star Wars and LotR.

If you watch the special features on the extended editions of LOTR you'll realize how much of a masterpiece they all are.
