Time to post another recipe

Baingan Aloo Or Eggplant and Potato

Ingrediants

1. 775 Grams Eggplant choped
2. 500 grams Potatoes choped
3.Two Medium Sized Onions Sliced
4.225 Grams Tomatoes choped
5.Turmeric Powder
6.Coriander Powder
7.Red Chilli Powder
8.Salt
9.Cooking Oil 100-125 ml

Procedure

Now take a deep pan.put it on stove on full flame and add cooking oil (it all depends on you how much u want to add put i recommend 100-125 ml) and sliced onions and let them brown for about 10-15 minutes when u see they are brown add 1 teaspoon turmeric powder, one teaspoon coriander powder,3 teaspoon red chillies (u can vary this but its more tasty when its more spicy) and salt to taste (about 2 teaspoon ) and add chopped tomatoes..Now let the whole mixture cook for about 20 minutes (it may take more or less) untill u see that the spices had blended themselves in and the tomatoes has turned into paste at this point u will see a reddish layer of oil floating over the paste or spots of oil appearing over the paste ...(remember to keep adding water but very little when only when required this will safe the food from being burnt)..... now add eggplants and potatoes and add water as well to turn thick paste into curry and to let eggplants and potatoes to be cooked in this water and remember to reduce the flame here....this will take about 20 minutes again...Now its up to you either u can serve the dish when u feel eggplants and potatoes are cooked or you cook it further cook it till the eggplants looses its form and becomes a paste ( i prefer the later)

Here your spicy Baingan Aloo are ready to serve

Eat them with either boiled rice or chapati

If anyone does not know th procedure of boiling the rice or making chapati let me know i'll tell u how to do it

Hope u all enjoy the meal
