Yes, that may be a rather vague question but should be simple enough to answer. You can of course have more than one answer and should post links to help expand the discussion. The song can be from an OST, ED, OP or moreover, anything that has to do with an anime. It should be songs that strictly comes from an anime and one that should be important enough that you can label it your personal favorite. The conversation should be about specific songs and not anime soundtracks as a whole and include your reasons for liking the song(s).
Two of my very favorites are Sokushin Butsu Hakushin Shounin by Kaoru Wada from Inuyasha OST 3 and Instant Music by The Pillows from the first OST of FLCL. The first song just gives me this very melancholy and contemplative feeling that no other song has before and makes me extremely grateful that I like anime or I would have never discovered music like this. While Instant Music is something I can literally listen to over and over and in my opinion is a perfectly constructed pop song. So post your favorites and rock on!

As cliché as it sounds, there are "far" too many to name them all. Since it asks for "songs" I'll stick to those with lyrics.
To start with there's "Half Pain" by Bana from Witch Hunter Robin. It has such a mournful sound, even without knowing the meaning behind the words it puts me in a mood to grab someone, hold them tight and reassure them all is not lost.
"Sweet Lies" by Itou Kanako from BLASSREITER for much the same reason. While it's an English language song, where it's set in the story (epilogue and end credits of the final episode) it feels more sorrowful than the words imply.
"Grace Omega" by Gabriella Robin/Yoko Kanno from Jin Roh may well be my favorite of all time. Once again there is a mournful sorrow in the sound of the vocals, the music, and of course as the end credits it relates to the somber mood of the story's ending on a very deep level.
"Last Regrets" (especially the long version from the Recollections and Anemoscope CDs) by 彩菜 (Ayana) from Kanon makes my heart beat fast. As the OP in the second series (2006) it was perfect to set the mood for each new episode. However, in the first series from 2001 (which I didn't watch until almost a year after seeing the second series) it's even more poignant when the only time it's played is when Nayuki catches Yuuichi at the train station near the end of the final episode. With the first piano note she leans forward, kiss him and it's enough to make your heart melt. On top of everything else, in the long version, at the four-minute mark there's a purely instrumental segment that only last sixty seconds but is like having your soul held and comforted.
Last (but not least) there's "I Hear You Everywhere" by Rie Tanaka from Chobits. Who would have thought such a wonderful song could come out of such a light story.
There is a certain sadness I feel for all the people who have never experienced the songs of Anime because they refuse to acknowledge it as a meaningful form of entertainment. I've lost count of the people who refuse to listen to the music because it's not in English and make sarcastic remarks like "it just sounds like gibberish".
Beauty is beauty and it doesn't matter in what culture or language it's found. No where else is this better illustrated than in Anime music and songs.
