Okay, here I go:

Kiba - one of the best fantasy plots I've ever heard of. Good graphics, too.
Claymore - it suddenly stopped. What a shame, it was very captivating.
Read or Die - good story, wonderful music. A nice anime for us book lovers.

There may be more, but that's what I can think of now....

i would say Clannad, not very talked about in forums, but probably the best anime i've ever seen. infact i checked it out after i seen the title on a backround @ konachan.com

Shinryaku! Ika Musume (super hilarious)
Azumanga Daioh (surprisingly, not a lot of people know about it)
Bakemonogatari (I LOVE this anime)
Needless (not super great, but it's very funny)
Kamen no Maid Guy (LOL)
Gosick (elegant and entertaining anime with awesome artwork)
Elfen Lied (I was so sad when it ended)

Yes, I know Gosick is ongoing, but not many seem to be watching it. Go watch it. Now.

Pani Poni Dash doesn't seem to be mentioned that often. (The cross of Azumanga Daioh and Lucky Star on CRACK)

Loveless, it may be a yaoi, but there's no sexual content in this anime, not that much kissing, the rest is just death of a relative, fighters and sacrifices, and abuse between the main character, Ritsuka, and his mother. Best anime I've ever seen.

School Rumble. It's funny, dramatic, romantic, and sometimes even crazy. Seriously, it's the first I watched and still my favorite.

I feel like this thread would benefit a lot from people justifying their responses more. Just stating a title is nice, but some of the shows listed here are actually incredibly popular (like school rumble) so throwing it out there without saying why you think it's underrated just makes it seem like you don't know what you're talking about ;D

That said, here's the shows I feel are underrated:

Yakitate! Japan: Funniest anime I have ever watched. It is fairly well known, but I still don't think it gets the credit it deserves. I've watched it twice, and the second time through even knowing what half the jokes were going to be, I still laughed just as hard. Any time someone asks me for a comedy recommendation this is the first one on the list without fail.

School Days: This show is amazing. The storyline is constructed extremely intelligently. There are no wasted characters. Everything from start to finish that happens in that show was planned and has a purpose. And the fact that this exact set of events COULD happen in real life is downright frightening. Never have I been happier about persevering through a slow beginning to a story than I was with this show.

True Tears: I'm not entirely sure this belongs in the "underrated" category, it may be more popular than I realize, but I found it to be an outstanding story and I consider it a must watch for anime fans.

Psychic Detective Yakumo.

I watched this a while ago. I've never seen anyone mention it, despite it's really well-thought-out story line and great characters. I know it's short (13 episodes) but isn't that good? It doesn't drag on, and in my opinion it ends just right. Of course, being the type of anime it is, the first two or three episodes are there to introduce characters and not story line.

I love this anime, it's been one of my favorites since I watched it and I could watch it over and over.
