I fail to see how elfen lied deals with mature content... It has one of the most shallow premises of any anime I have ever seen. Unless you mean mature as in graphic violence..

I'm surprised Hellsing isn't on the ops list, granted there are two versions of Hellsing and I liked them both. The more recent hellsing ultimate/ova is unbelievably violent so if you can't handle that steer clear of it. Also watch the Brotherhood version of Fullmetal Alchemist, it is by far superior above the older FMA series, I don't even much care about the old series anymore after watching Brotherhood.

I suppose you could watch something like Fist of the North Star also, which has some continuity errors and more than one studio developed it so the art style varies between episodes. Also it is an exceedingly old and violent series but its on Crunchyroll and actually pretty good, not to mention lengthy. Also there are some other adult friendly series you may find of interest like Death Note, Deadman Wonderland, dot hack sign, and Guilty Crown. I know there are others but that's a few of the more thought provoking and or adult type series I can think of at this time that aren't on your list.

If you just care to watch a thought provoking anime regardless of the animation, please watch the following series:

BERSERK
MONSTER
Grave of the fireflies
Rurouni kenshin: Trust & Betrayal OVA (the anime is a little bit more like Naruto but the OVAs are amazing!!)
Fantastic children (the title sounds childish but the premise of this anime is very thought provoking and heart warming)
Terra E (this is one of those animes where there are no evil characters, just human characters with good and bad decisions/beliefs)
you should definitely watch Legend of the Galactic heroes, more thought provoking than that you will not find.

I know it's not on Crunchyroll, but you might be able to torrent it or pick it up on amazon:
The Berserk movies (3 of them) - A mercenary by the name of Guts is signed on for this army, he defeats a renowned knight and is approached by the most famous mercenary band in the land (Band of the Hawk). He reluctantly joins up with them and fights with them through the years. I can't give too much away because it makes for a great plot and I'm terrible at giving details without giving away plot-twisters.

Steins Gate(MUST WATCH) - It's about time travel, very interesting and attention demanding. It's really good if you like to try and figure out plot details before they happen, it's also hilarious.

Shin Sekai Yori - It's about kids, but it's not for kids.. It's a very underrated anime. If you're offended by homosexuality (either male or female) there are brief moments of it. If you can stand 3 minutes of it that's in like.. 3 episodes tops, you'll really enjoy this.

Another - Horror anime. Plot heavy and attention demanding as well. Not really going to give you chills, but it tells a good story and has some pretty good WTF moments.
