Titles I don't think have been suggested so far. (my apologies in advance if I list repeats):

Mononoke (Medicine Seller) - http://en.wikipedia.org/wiki/Mononoke_(TV_series) - stunning art direction

Le Chevalier D'Eon - Speculative Historical fiction that will have you reaching for those history books.

Macross Plus -adult characters and situations

Patlabor OVAs (particularly Patlabor II)

Noein (reservedly. Many of the main characters are children, but the Theoretical Physics is beyond the age group of the characters represented)

Oh! Edo Rocket! - The only comedy I'm including here. It was based on a stage play. Breaks the fourth wall often and in clever ways. Speculative historical fiction. Space aliens and pyrotechnics. Hilarious dub. (and I usually prefer subs). Quite funny even for me, and I'm fairly jaded.

As for stuff other people mentioned, I would highly second anything by Naoki Urasawa. While you can find Monster streaming now, It is getting harder to find the eight volumes of Master Keaton. Geneon USA released this show back when they existed. Once the remaining volumes are gone, I sadly doubt we will ever see it released in physical media again. Worth tracking down while you can. Reading Urasawa's Pluto manga now, and it is a m a z i n g!

Hi, I have only been watching anime for about two years, though I'm older than you. I guess I've still got a lot to discover, so I'm enjoying the ride. I noticed that you didn't mention the "Trinity Blood" series. It was the first anime that I watched, and I loved it, and its still a favourite. Michelle

From the top down I have listed them in matter of seriousness all-around, and not a rating on how good they are.
I marked some anime, those that if I saw correctly has not been mentioned,.
Some might be off by a little, but not that far off

What looks like it is, keeping it real... at least mature:
Bokurano - 2007 *
Monster - 2004
Madlax - 2004 *
Juuni Kokuki - 2002
Kimi ga Nozomu Eien - 2003
Gunslinger Girl I+II - 2003+2008
Speed Grapher - 2005

Lighter but still dark, the theme is not that mature, but the story is:
Melody of Oblivion - 2004
X TV - 2001
Last Exile - 2003
Durarara!! - 2010
Scrapped Princess - 2003
R.O.D OVA - 2001 *
Eureka Seven - 2005

Detroit Metal City - 2008 * (Dark, adult and childish, but not for kids...)

* = should be seen.
Then again so should the rest

Psycho - Pass, Philip K. Dick inspired Bladerunner/Vanilla Sky esque
Shinsekai Yori, the characters are kids at the start but the story complex and interesting
Natsuyuki Rendezvous, adult romance instead of high schoolers

Another vote for Uchuu Kyoudai / Space Brothers

Shigurui: Death Frenzy is one that I thought was pretty deep. Everything else I would recommend has already been mentioned.
