I like a lot of different anime but lately I've been watching anime's very similar to the three that I have listed above. School life, Comedy, Romance, etc... I also like high quality animation (i.e. Details) because I don't know... I just feel like watching low quality stuff really just ruins the experience. I really liked Fortune Arterial and Princess Lover because... I don't really know how to explain to be honest... but I guess it kind of motivates me to try harder at certain things sometimes...? LOL like although obviously it's just an anime... but when you see the luxurious schools and life-styles... sometimes it just reminds me that I should work a little harder in school. But Yeah! I'm not exactly 100% great on describing but I hope you guys will be able to make something out of it and help me out with some more recommendations! Thanks!

Hmm, based on this, it seems that you're interested in any harem series with school life/drama. Hmm, I'll try to throw out a few titles here although there are much more manga than anime in this category imo:

School Days - first one that popped into my head. Watch it on CR. It's kind of a famous anime lol
Ichigo 100% - short anime series with 12 episodes involving harem and school life
Infinite Stratos - one guy, 5 girls. Well, full school of girls. You get the idea.
Hidan no Aria - involves chicks with guns.
Mashiroiro Symphony: The Color of Lovers - I'm only throwing this series in here as it fits into the category. You can watch it here on CR but it's a rather weak series imo.
Yosuga no Sora - warning: alot of ecchi and storyline involves some incest...
Goshuushou-sama Ninomiya-kun - romantic comedy/harem series
H2o: Footprints in the Sand - although sometimes classified as a harem, I find this series a bit more serious with psychological twists
Myself; Yourself - one of my favorites. Great characters and storyline.
Shuffle! - involving school life, harem, and magic. I actually watched this in dubbed tbh.

So I'm looking for a new series to watch... Preferably a Shonen with emphasis on fighting. I really love Hunter X Hunter, Yu Yu Hakusho, and One Piece so something along the lines of that would be nice (As in heavily character based, and doesn't necessarily play by the normal rules of Shonen tropes as well as having more intelligent thought out and original plots unlike Naruto and Bleach). Any suggestions?

Chrno Crusade - Great story with likeable characters, fighting, superpowers and demons.
Dragonaut: The Resonance - Part Mecca, but not at all, they are dragons... Interesting story and characters.
Eureka Seven - Riding the air, Twists and turns in the plot, you come to like and hate characters
GetBackers - Lost something, need to get it back, who you gonna call... great characters and interesting plot
Great Teacher Onizuka - Crazy teacher, awesome man, horrible students, great watch
History's Strongest Disciple Kenichi - Pupil learning from the masters of masters of Martial Arts, great humor, awesome ending
Initial D - about cars, but not, it is about battling, car control and much more, nice OST, strange and great personalties
Kekkaishi - superpowers in generations, battle over evil, fair power-up and nice story
Samurai Champloo - Awesome fighting, samurai!!!, great characters, great story

Less fighting, still shonen, with good-great story:
Madlax and Scrapped Princess

I enjoyed Death Note but not really the style I'm looking for. Fairy Tail, FMA, and Shaman King are great and along the lines but I've seen that. I didn't really enjoy Soul Eater or Code Geass, and I've been meaning to watch Buso Renkin soon. And I've heard a lot about Blue Exorcist, Claymore, and Fate Stay Night but haven't watched em yet. They don't sound super in my alley but I guess i'll check em out. And I've never been a fan of the Yu-Gi-Oh franchise after it shifted to a card game series. Shakugan no Shana sound pretty cool though, so I'll check that out for sure.
