I have watched (The ones I can remember):
Tales of the abyss - I liked the way the male protagonist grew into somebody taking more responsibility. I did take a look at the other in the "Tales" series, but they did not really appeal to me that much

The world god only knows - (The main male protagonist obsession of games seems kinda funny to me) but its also a good plot
Nyarko-san - (It was a bit silly but still quite funny)

Fate / Zero (Basically all of the "Fate" something ones)
Boku wa Tomodachi ga Sukunai

(The ones I can remember, they might overall hit a pretty wide collection of genres)

I pretty much like a lot of animes that include anything supernatural or fantasy, but I also like comedy (also the silly kind) to take a break from the "serious" stuff. I think light romance is a good way to make an anime more interesting, as long as its not too heavy. I like the ones that also show people having personal growth and a bit of drama( so to speak, as in Tales of the Abyss) are good.
Dislike:
Harem (It all just seems stupid to me, the kind where all the female characters somehow fall in love with the same guy just like that)
Way too silly things
Mecha (Not really a fan of it, yes I know there are a lot of them)
Animes with many episodes (If its under 100, then its good)
I dont mind it that much, but where one person has the power to pretty much to erase cities somehow at some point (usually the main character) also can seem a bit stupid, I dont actually dislike it, but it needs to be done right. I like the kinds where there is a group of "extraordinary" people who has something to contribute with like Tales of the Abyss or just not a too strong main character.

Ixion Saga DT - comedy/fantasy/satire
My Little Monster - comedy/slice of life/romance

Stuff I don't like:

-Key anime (Clannad, Kanon, Air, etc). They are unnecessarily tragic and something about the character designs creep me out. I think it's the eyes. I don't mind a tragic love story, though.
-I would prefer something not set in high school, but I'd be willing to try it even if it is set in high school.
-Not really into yaoi, yuri, incest, or hentai
I'm watching Say I Love You and My Little Monster this season and they are pretty good.
These are all the ones I like other than what you already listed:
Itazura na Kiss - Pretty decent straight romance anime with a likable female lead and a tsundere male lead. Less than half of the story is in high school.
Nodame Cantabile- More slice of life and music than romance. But there is a sizable romantic subplot that develops over the course of the series. Takes place in college and beyond.
Lovely Complex - A nice high school romantic comedy about a tall girl and short boy.
Kaichou wa Maid-sama - A well made high school romantic comedy about a student body president who works at a maid cafe.
Ouran High School Host Club - Really fun to watch lightly reverse harem romantic comedy.
Marmalade Boy - Early 90's high school romance anime. Sort of the archetype for a lot of others in the genre, a little lengthy and melodramatic but not bad.
Thanks a lot! Some of those have been on my radar for a little while, but I never paid much attention to them. I especially interested in Nodame Cantabile and Lovely Complex.
Add Hanasaku Iroha to your list. It's centralized around a girl who has to work at an inn in order to live there. Its a pretty awesome romance-ish/ slice of life and from this list it seems like an anime that you'd enjoy...because I know I did~

These are most of the ones on the site that I liked enough to watch multiple times. They're mostly slice of life stuff, but you have a lot of KyoAni and random Romcom's in your anime list so that shouldn't be a problem.

I feel I should be more specific in what I want...
I'm looking for either a) slice of life/coming of age anime, b) shoujo romance/drama, AND/OR c) shounen action-adventure
A) I really like anime that just follow the character's life as, well, they go through live. I especially like it if it's a coming-of-age anime too.
I've seen/like: Hanasaku Iroha, Piano, GTO, Kaleido Star, Glass Mask, Bamboo Blade, ef~A Tale of Memories, Usagi Drop, Wandering Son, Whisper of the Heart
Notes: I don't like any slice of life anime that have a supernatural/fantasy feel to it, unless of course, it's funny/weird like FLCL.
Didn't like: Kids on the Slope
B) I like shoujo-romance that has lots of drama in it, and is a lot more serious than the typical shoujo-romance. It has to have some realism in it, and sort of be like a slice of life also. If I had to narrow it down, I'd be looking for something that is a cross between Marmalade Boy (my fav!), Kare Kano, and NANA.
I've seen/like: Peach girl, Shuffle!, Air TV, Kanon 2006, Clannad, To Heart, Boys be..., Magikano, Maburaho, Suzuka, The World of Narue, Sand Chronicles, Chobits, Furuba, Karin, High School Debut, Kitchen Princess, 5cm Per Second
Notes: I don't particularlly like harems unless there's a clear winner or one winner. Like in the anime Clannad, Shuffle!, Suzuka, etc.I do not like romantic-comedies. So no anime like School Rumble. I also don't like action/fantasy-romance anime unless it is like InuYasha or The Vision of Escaflowne.
Didn't like: School Rumble, Rumbling Hearts, Hiro no Kakeru (sp?), La Corda D'oro, DearS, Rosario + Vampire, Vampire Knight, Say "I Love You", My Little Monster, Honey and Clover, My Bride is a Mermaid, Girls Bravo, Parakiss, Hot Gimmick, Kimi ni Todoke, The Wallflower, Vampire Bound
C) I either like shounen that's action-adventure-fantasy/supernatural OR a sort of detective/bounty hunter/ a guy has a job each episode to do anime. I also tend to like old school shounen.
I've seen/like: InuYahsa, Yu Yu Hakusho, Blood+, Claymore, Zatch Bell, Gantz, Samurai Champloo, Heat Guy J, Cowboy Bebop, Black Cat, Get Backers, Ghost in the Shell, Lost Universe, Devil May Cry
Notes: I do not like MECHA, long runners (50-100+ episodes MAXMIUM), ecchi/hentai; I like blood, gore, horror, and a good story.
Didn't like: Trinity Blood, Full Metal Alchemist, D-Gray Man, Shana, Kekkaishi, Air Master, Fairy Tale, KenIchi, Gundam series, Gunsliger Girl, Reborn!, Buso Renkin, Dragon Ball Z, One Piece, Naruto, Bleach, Disgaea
