I think the Mistborn trilogy would make a cool anime...
Oh, and Leviathan by Scott Westerfeld, which I'm reading right now. That would be a pretty awesome anime!

For video games, I'd love to see Fire Emblem: Path of Radiance and Radiant Dawn made into an epic anime series.
But the game I'd most love to see as an anime would definitely be Yume Nikki. I would die happy if that ever happened! It would be so wonderful.

I'm a huge fan of dystopian novels and would love to see works such as Fahrenheit 451 or 1984 adapted into anime.

I think Tales from the Crypt, both the TV show and comic, could be turned into a good anime.

NORA

It's like Fate/stay night.
- Nora, has the attitude of Inu Yasha
- Bajee, early part of the series he comes off like a jerk. Acting like as if he is a teenager

Yotsuba&!
- still remains to be a manga

They made Star Ocean: The Second Story into the anime Star Ocean Ex, but it's God-awful. I would like to see them remake it.
Also, Lufia II: Rise of the Sinistrals.

In terms of graphics, Riviera, Yggdra, and Blaze are already anime. Though not all Gundams have had anime adaptations (outside of pictures, of course), I wouldn't count these Gundam titles as Mobile Suit Gundam (also, just "Gundam". It's confusing if you referring to the overall franchise, the robots, or the original shows) was made into an anime before years before any manga version came out. I'm not sure but I think some anime has incorporated Macbeth themes from it.

For me, please tell me I am not the only one that would like to see a faithful adaptation of the Odyssey.

I think Incarceron would make a great anime. You've got your steampunk element, your childhood friends, your insanely technical, almost magical series focus...what other anime tropes could you ask for?

You aren't. There are a lot myths, epics, and folklore I think I would enjoy faithful adaptations of, I just didn't think those would fit into the media listed by the OP.

I'm fully aware that JRPG often use anime style artwork but I was thinking of a full length 12 episode anime adaptation.

I agree that not all Gundam novel/manga had an anime adaptation because Bandai usually think that making old gundam novel or manga to an anime is counter productive. Unless they haven't made any Gunpla out of it like the recently announced Gundam the Origin anime.

There is a strong influence of Macbeth in Code Geass but what I want is a faithful adaptation of Shakespeare's work. I want to see someone brave enough to make anime adaptation out of Macbeth and see if they could overcome the curse that is feared by many.

Totally, anything cyberpunk is always a good call. I know GITS has already been done, but it's a genre that works really well in anime and I wish somebody would make more of it, especially nowadays. One of my favorite movies is Children of Men so something like that would be awesome. Adapting Transmetropolitan or 2001: A Space Odyssey would be sweet too. I think an anime that's about the old west would be awesome. Like a mix between Michiko to Hatchin and Trigun, haha. I also want more realistic slice-of-life like BECK; maybe something based off of The Perks of Being a Wallflower. Another really interesting one would an adaptation of The Prestige. I could go on and on.
