Yeah so as you guys know. Blue exorcist is an epic anime which I got into after watching D-Gray-Man. Well my question is simply this:

Since the anime airs on Sunday in Japan, why does crunchyroll cast it on Wednesday?

and answer would be appreciated

It's not a high priority anime. Meaning Naruto, Gintama and a few other animes they sub them and cast them same day due to popularity. Though Ao No Exorcist (Blue Exorcist) has become rather popular CrunchyRoll has not yet seen the demand it would need to cast the same day release.

There are other sites that show it same day, Sunday, when it airs. AnimeFreak does this as well as a few other sites. These sites tend to rush the subbing and it is not as accurate as CrunchyRoll's subbing. But if you are looking for a quick release then that's the best answer. Most none paid for websites do not have the best translators since many of them are volunteer. While I'm sure CrunchyRoll actually pays it's subber's and coders since it has a subscription. Though I doubt its much, that does create better translations.

Plus i think crunchyroll has been a little pre-occupied getting ready for the new fall simulcasts. but yea totally agree with ShanHikari =)

The simple answer is that is when Aniplex allows Crunchyroll to post the episodes. You may not have noticed, but this simulcast is by no means exclusive to Crunchyroll:

I'm not trying to be offensive or anything, but ShanHikari's post is completely and utterly wrong. As TheAncientOne pointed out, it's Aniplex's decision and most likely has to do with Crunchyroll licensing it from a US distributor rather than a Japanese one.

But what's the point of discussing this now anyway, when there's only 1 (or 2 for those watching on CR) episodes to go?
