From scientific point of view i believe its something to do with different frequency sounds giving of certain wavelengths that our brain picks up on.
But personally i think it's because if something is composed well enough you're able to just sit back relax (regardless of music genre) and forget about everything except whats happening in that very moment.

Why wouldn't anyone not listen to music???
I mean, it helps you relax, it sounds nice-well, that can depend on what you like, and its good for the soul.
