Psyren was awesome, could never understand why it was always at the bottom of the Shounen Jump rankings.
An Anime would have really gave it the boost it needed to be on level terms with the other series in Jump with Anime adaptations.

Mx0 and Eden no Ori.
Mx0 being my number one favorite manga but got canceled, it was pretty popular in Japan with it's Tankobon sales being in top 10, if they were to revive this as an anime I would be extremely happy.
Eden no Ori another manga that just ended after being canceled, it got over 180 chapters which is enough to make 2 seasons without fillers.

Absolute Boyfriend and Shinobi Life are good ones, but I'm DYING for Hot Gimmick to be adapted into an anime. It is one of my favorites and t would sooooo awesome to see it in an anime format.

Especially since I can't read Japanese worth a darn, so I have lots of trouble with my import manga.
(I haven't tried looking for a translation, but I just checked about licensing, and it's apparently licensed in the USA now.)

Ping Pong, Nausica (the movie did not do it justice since the manga was just a segway to make a movie, should be given a proper 40 episode series), Cromartie High needs more of the anime, No. 5, Scott Pilgrim, GoGo Monster, and some of the Zelda titles.
