I look at it this way for women or for anyone in general.
Knowing their Feelings is a whole different story
From actually Understanding their Feelings.
Everyone has their own complications not just women.
Seeing as how you're asking why they're being complicated (stuck up/High standards),
why are you being just as complicated to force "yourself"
to be enough for them or meeting their expectations?
Just to end up feeling you are not enough for them?

Just be yourself bro, eventually the right one will come by, it's a matter of if you'll see it or not.
And yes there will still be some complications lol.
