I can't pick between Higurashi no Naku Koro ni and Umineko no Naku Koro ni since they are so good.

Note: The two anime are in Japanese and it's better in Japanese than English imo. I watched the english dubbed of Higurashi and it's not as good as the subbed one since I watched the second and third seasons of Higurashi. I need to finish the fourth season but I'm currently reading the visual novel of Uminkeo since the anime is not done yet. I regret watching Higurashi in dubbed

As for Umineko, a lot of people say that the anime sucks compared to the visual novel version.

I personally hate the series to the core, but it gets a lot of love, you might like it. If you're looking for actual intelligence+blood+horror, try Baccano! or Shiki.
