Fruits Basket....But of course, the creators screwed the story up by changing the curse and Akito's gender.
Tsubasa Reservoir Chronicle...This was messed so bad that the creators (Clamp) had to cancel the show. There were OVA's made but as they are incomplete...
Puella Magi Madoka Magica...But I don't know if this counts since there are movies being made, and the anime did tell the whole story in 12 episodes...Still, wish there was a bit more.
X/1999...Okay, so the anime actually gave the series an ending unlike the manga (come ON Clamp!) , but it was rushed a bit, and could of gone more into detail.

I though that was because it didn't do well at all in Japan that's why they cancelled it. Personally I hate that series, but to each his own.
