Sometimes I just steam asparagus, green beans, or broccoli, put just a little butter on it, squeeze some lemon, sprinkle a little salt and pepper, and have it as a meal. In terms of vegetables, they're very filling.

This is my favorite go-to, super versatile, delicious vegetable dish. ^_^
Heat oven to 425°. In a large oven-safe baking dish (13 x 9 is what I use) add kale (LOTS of kale, largest veins removed), chopped red, yellow, green, and/or orange peppers (I use sweet variety for all colors and any color(s) will work), scallions, 2-3 tbsps olive oil, ~1/2 to ~3/4 tsp salt, and ~1/2 tsp fresh ground black pepper. Thoroughly hand-mix all veggies, salt, pepper, and olive oil until evenly distibuted and place in the oven for 25 minutes, stirring once halfway through cooking time. My more commonly used variations include kale, sweet yellow onion, whole or halved peeled garlic cloves, grape tomatoes, matchstick carrots, sliced yellow summer squash, sliced and halved zucchini, even small purple potatoes quartered if you happen to have them (not many, they're really just a starch and only there for color, I've tried blueberries in it once but what a mess!)... just about anything can go in it, cubed eggplant, corn, bok choy, celery, mushrooms (presliced and not too many, they give off water), pattypan squash... I'm sure a dozen veggies I've forgotten... Spoiler Alert! MEAT AND POTATOES!!!!! Hahahaha, just had to say it, but I do not eat healthy, and what I mean by that is I do not like fruits or vegetables. I love my red meats and love my greasy foods, more grease and fat the better!
