Anime does many things, it conveys morals, human relationships, humor, horror, and explores the many facets of being human. What it does NOT do however is try to stick to reality and expectations of the "real world."

That being said I'm going to be very blunt in my next statement. I find her absolutely hideous. I find her desire to look like an anime character bizarre. Imagine someone going up to a Dali and saying to themselves, "I want to look like that." It's the same level of bizarre. Your taking an abstract image that is not human and slicing and dicing your body till it fits a mold it was never intended to in the first place. Coloring your hair, putting on eye makeup, cosplaying, that's one thing but to permanently alter your body in such a way is horrible and sad. I love cosplay but I don't do it because I find whatever character I choose to be a physical ideal but rather I cosplay because I want to celebrate that character and that anime.
