Are you talking about the Soundtract , the Opening and or the Ending songs? Each anime has a musical director who creates the soundtract but as for the OP and Ed , it is either by an established band who actually submit their songs and its usually a contest and or those that are "anime songs' that is produced for the anime and they are either sang by the seiyuu or an anime singer ( forgot the term) and there are those that are composed by the music director like the likes of Yoko Kanno which brings a different level to the quality of the music of the anime. Of course depending on the song they may or may not have harmonies, and as seen from the response to your question , there are indeed. You will hear it more when the anime is musical in nature

[Purchased soundtracks too!] One I like in particular is the Uta no Prince-sama series. Its pretty much all about music. ^_^

I like shows that have just utter moments of silence for some scenes then pick up with soft melodies here and there for others. Or ones with a constant soundtrack playing in scenes, that shifts to fit each scene. I guess, really, I like all of it.
