Yu yu hakusho, Hunter x Hunter, Inuyasha, Rurouni Kenshin, and maybe Reborn. The final arc of Kenshin wasn't as good as the manga but I liked how they were as a group. The same goes for Inuyasha. i was a little tired of the Naraku thing but could watch even fillers with no problem.
I'll probably have to edit this list later.

The beauty in some anime IS the end. Eva for instant is entirely made by its ending in my view, many romance/coming of age animes are that way aswell. For instance I just finished 'kids on a slope', whilst the ending was a bit rushed and it probably needed another 2 episodes to fully pad it out the anime didnt have anything else to do, if you pull a bleach 'lets repeat what just happened with X replacement generic enemy and Y generic 'oh no i lost my powers'' to shows like that It wont ever work and would feel forced and the whole show would outstay its welcome.
That said, there are some shows I would love to just keep going
1) Hunter x Hunter
2) Berzerk
3) Welcome to the NHK, maybe not go on forever, but give us an overview of his life and what happens to/with misaki etc
4) Ghost in the shell
5) Animatrix
I dunno, really the only one that would work is Hunter x Hunter (and maybe berzerk) and even then I think you would lose alot of the beauty in the story of Gon and Killua (it really is their story and noone elses)

I agree that most long running anime loses my interest after a couple hundred episodes. I think these could use a lot more episodes, but I would want them to end eventually:
1. My Ordinary Life
2. Baccano!
3. Darker than Black
4. Big Windup (I never get tired of watching them play baseball!)
5. Magi (I like what I've seen so far. One of those shows I could keep with for a while)
