Depends on your reasons for wanting to give it up. If it's is only for a while you want to give it up tell yourself you are letting episodes build up so you can see more of the story at once. If you just wanna cut right down find some activity away from home, that way you can't physically watch them and depending on the activity it can be productive and/or healthy. I would say if you were going to just replace with tv shows or something then it would be pointless giving it up and good anime is awesome.

I stopped, for 5 years.
At the time, There weren't that many good shows coming out every year and I had quit going to cons(and no matter how far back into anime I get I will NEVER do that shit again) because I was annoyed at everyone. When the first Full Metal Alchemist ended on Adult Swim, that was the last thing I watched for a long time. I didn't torrent anything, I didn't go on message boards, and the last DVD set I bought was Paranoia Agent.
I think I was annoyed with the "monster/card battle" trend at the time, so I just kinda stepped back. (hell, even [as] track record wasn't so good. . Bleach. . .Inu Yasha. . . .)
I started again when Full Metal Alchemist Brotherhood aired on Adult Swim. I watched that, then I watched Durarara and figured "okay, ya know what? there must be a bunch of good shit piled up to watch right now." I got on Netflix, Hulu and This here site right here. Not only did the good shows pile up, there were 4 fucking excellent shows this year (3 running into next year)
I think I picked a good time to come back, missed the height of the moe invasion, Jojo's Bizarre Adventure has a new show, Eva Rebuild is 3 quarters done and I like this Urobuchi Gen chap.
Only a couple of really great shows are going to come out every year, so going away for a while is good because when you come back you'll have 9 or 10 things that came out that you're bound to love.
(it seems like 2009 was a pretty decent year, actually)

I've never cold stopped watching anime, but I do go through periods where I watch less. Work piles up, I begin dating more, maybe read a few more books that takes time away from anime, etc... Personally, anime is just one of many hobbies of mine. I find that by moderating my intake of all my hobbies keeps me interested in that which interests me longer than I intended.
The other obvious benefit to moderating your hobbies is you don't burn out or feel the need to stop or feel as though your hobbies are oppressive to the point of addiction. An IV drip for all hobbies. An Anime IV drip. Exercise drip. A book drip, and so on.
