It's the awesome smokey savoriness of it. The umami flavor. Alas, that eternal culinary conundrum-- whatever tastes great is also terrible for your health! I used to trim the fat from several pounds of fresh bacon to render into lard to make the roux for gumbo. Those were the good ole days before my triglycerides and cholesterol became too high!

I agree. I always pass on it and place it on my siblings plate cause they love it more than I do.
I always thought the crispy crackling skin on pork in Chinese Suckling Pig or the skin on a roasted pig is WAY more better than bacon!
