People can be stubborn, they can be bad at certain things, and they can have less reasoning skills/experience than you, but they are not dumb. Stupid and intelligent are loaded and overall meaningless words. Before you ask yourself how you deal with stupid people, look in a mirror, because you're stupid to somebody.

If a dog knows how to open doors, bring you a beer, use the toilet(and flush), that dog can be called "a smart dog." He's still nowhere as intelligent as a human being. However if a dog mistakes his foot for an enemy and growls at it, you might think to yourself, "Stupid dog." Even though he's in the same intellectual realm of the aforementioned dog. Anyone less intelligent than you is "dumb", therefore, since there is only 1 person in the world who isn't, I think this question should be reworded to, "How do you deal with people that aren't the smartest man in the world?"
