I think the only ones I played on the PS2 were Kingdom Hearts and KH2, they both were good. I prefer the original.
I may have to check out FFX based on the comments here.

For me, either Ar Tonelico or Atelier Iris 2 are what I would consider the best PS2 RPGs in the classic JRPG sense.

mana khemia 1 and 2 (2 I think is better, also the music is bad ass)

atelier iris 1, 2 and 3
Ar Tonelico 1 and 2
Grandia 2- better on Dreamcast though (stay away from grandia xtreme. That is crap)
