Ging from Hunter X Hunter, Kotoura's mom from Kotoura-san, and Taiga's dad from Toradora.

Just kidding.

I'd have to go with either Naruto's parents or Gildarts from Fairy Tail. They all seem like they really care, although maybe a bit too much on Gildarts' part.

.....okay, maybe he's dotes a little too much on his wife and daughter. But him and his wife are still pretty cool parents.

Trisha Elric from Fullmetal Alchemist (and FMAB)

They didnt really go into her character tho? how can she be the best?

And i Agreee with OP

True, but I'm also going a lot by the manga where we see her a bit more, and I actually don't know any of the other parents being suggested here so I can't compare. Everything we do see of her though leads me to think she was an awesome mom. Even though she wasn't a fighting mom or anything super cool like that, she did raise the boys by herself with all the love, happiness, gentleness and encouragement one could ever ask for. And honestly, I think some of the other parents that have been suggested don't get much more screen time than Trisha does... Naruto's parents? Shikamaru's mom? (although to be fair, I don't watch Naruto, I just read it, so I can't really say anything about their screen time)

Okay true

Naota's dad was pretty cool, a bit neglectful, but still cool.

Also Light's dad. He was a really nice man

Fusa and Ryuuzou Takehara from Xam'd. They have one of the best sub-plots of any anime I've watched.

I'm gonna have to agree as they're both adorable and lovable parents.

Thinking about the question, Mother and Father figures aren't really all that prominent in Animes. On top of that, their roles are usually a bit flat. At least from what I've seen. I could be mistaken on this but from all the anime I have seen Full Metal Alchemist was the only one that had parents that were prominent in the story. The only other one I can think of that had some dimension is Card Captor Sakura. Hmm...I may have to pay attention to this aspect some more.

Cheers!

There are a few, just that sometimes you don't notice it. For example:

DBZ: Goku raised his son Gohan to become an excellent fighter while ChiChi raised him to become educationally inclined.

Soul Eater: What other shinigami god you know that protects the town that his son (Death the Kid) is living in with his soul essence?

Denpa Onna to Seishun Otoko: Yeah I know, usually an aunt that is trying to pass off her daughter onto you and have no sense of being fully dressed around you won't win "Parent of the Year" (she spun her child around and lodged her into a wall for Christ sakes!). But you have to admit, she creatively find ways to help her daughter and nephew and because of it, everyone got along better by the end of the show.

Usagi Drop: I know, I know, this shouldn't be up here but the dude took the parent role and did a heck of a good job at it. An everyday salaryman that only knows work and doesn't have anyone living with him. All of a sudden, he finds himself taking on his grandfather's kid and trying to adapt to a life of raising a kid and the kid adapting to life with a grownup that hasn't a clue lol

There are probably more but those are the most prominent ones that came to my mind.
