Gundam: The events shown have happened before once you remove the fictional elements. They will happen again. We had colonial revolts before and we will have them again once we colonize space.
The giant mecha only really work in space or underwater. You can't scale something up or down and expect it to still work. Gravity would fuck them up on land. Closest we can currently get with our own technology? I'd say the HAVWCs from Flag or Ghost in the Shell's Tachikomas.

But seriously I'd probably have to say Fairy Tail, if only because there are so many cool types of magic to learn. Hunter X Hunter would be cool also. Both of those shows you'd be capable of learning something just by existing (magic, nen, etc.).
Also, for everyone saying Bleach, you are a human. You'd be hollow-bait. Just saying.
If you said SAO, I assume you mean AFTER SAO ends, since a death trap doesn't sound too appealing to me.
One Piece you'd either be a marine or wanted by the marines. Not too good of choices to me.

I'd have to invent an anime to pick the right one to live in. Makes more sense: I could pick whatever I wanted in it - everything from spiritualism, mysticism, cute girls, super AI, awesome scenery, and the list goes on and on.
