I used to listen to a lot of death metal a few years back, lightened up a bit from then.
I really love Deadlock <3 (German Melodic Death Metal band).
Even though I really wouldn't consider them death metal? Dimmu Borgir is really good too. I really like their song 'The Serpentine Offering' goes fucking hard. Although, I would listen to bands such as Six Feet Under, Benemoth, Children of Bodom, and Slayer.

i prefer melodic death metal also (im going to lump folk metal in there too), for me its all about the dichotomy between the melody and the vocals. lately though I've been getting into some instrumental stuff...anyway, here are some of my favorite bands

melodeath:
Amon Amarth, Be'lakor, Dark Tranquility, Eluveitie, Ensiferum, Equilibrium, Fractal Gates, Imperanon, old In Flames, Insomnium, Kalmah, Mors Principium Est, Omnium Gatherum, Wintersun

Týr/Heljareyga kinda fall out of the melodeath genre but you can chalk them in with folk

instrumental:
Cloudkicker, Intervals, Animals as Leaders, Gru

I prefer melodeath also (Be'lakor, At The Gates and Kalmah first came to mind), but also do enjoy Cannibal Corpse, Cattle Decapitation, and Pig Destroyer. Admittedly, it is hard to say their names with a straight face. Still awesome.

The only explicitly death metal band I listen to would be Opeth. Most death metal is rather boring when played straight, in my opinion. It's overly slow, moody, sludgy... deliberate is the word? Some other types are good. I started to get into black metal and grindy stuff a little before finals took all my time away, but I realized I was just listening for the gimmick value of how extreme it was. You can only take so much Cattle Decapitation lol

I usually stick to prog metal and branch out from there
