Alcohol can knock down the inhibitions in people. If you can get them to unwind fine. I don't know what line of management work you're in but taking a client out on the town or to a local tavern conveys a message that your company cares enough about this individual to be willing to entertain or care for beyond just the dollars and cents involved in the deal. It gets boring in motel rooms, the routine is the same no matter who it is you arranging to see if you are the client. Your boss may see this as a stellar opportunity for him and the company you represent smoozing with the client. Talking business while eating and/or drinking usually puts the advantage in your court unless the individual being "treated" is hardcore all-business results-oriented only.

Getting a client buzzed or light-headed reduces their inhibition or defenses toward what it is your company is trying to promote. Opportunity. It could be your boss is an alcoholic and he doesn't like drinking alone with a client. Your being there provides company. It also might be training for you. If you're observant enough you might detect something about your client your boss missed. Or your boss is trying to get you exposed to the clients your company is interested in. This is 1 form of mentoring.

I had a boss that did all important meetings at bars, and usually took as much of the team as were available with him. I know they liked bringing me because I never drink while I still have someplace to drive later in the day, so I was a guaranteed DD.

Could be he just wants extra people around to make his group look more impressive, or to match the numbers of people he's meeting with so he's on an equal footing.

Or he might consider it your 'salary', if you're in an unpaid internship. I know when I manage unpaid positions, I always try to find ways to get them something special whenever possible, like extra copies of our games or invites to the parties and such.
