I think it's fine to have a lot, just as long as it's necessary.
I don't mind a filler every now and then for humor's sake every now and then, but just as long as it doesn't get out of hand I'm fine with it.
Some stories/anime need more chapters/episodes to complete the series. Having more chapters/episodes if completely fine because it's possible that the ending would be a bit lousy if it weren't for that. Plus, if there are more episodes, then that means there's more for us to enjoy, right?

If the plot/story can justify the means to need that many episodes BEFORE it is Rinse and Repeat then all the power for more anime.

How many times in:

Bleach, where ichigo loses power and regains his power trying to save a (female) character??

Naruto, where naruto says he wants to be hokage and want to save his best friend?

One piece, how much sailing and pirating just to get one piece?

Gintama, … how much shit versus actual shit. It has its funny moments.

Fairy tail, beat one boss another shows up trying to tie a knot with one super boss.

One Piece is probably the most popular long run series right now. The longest series I've been following is Naruto: Shippuden (with Naruto collectively). Detective Conan also has a lot of episodes....

12 is too short; the plot more often than not feels rushed and lacking the amount of time for proper character development.
100+ is way too long; the show starts to suffer from arc fatigue and then there's filler episodes, things start to get repetitive and if the antagonist is a villian sue...
24 -50 or so seems to be a good balance if the plot is good, but if the plot is bad or absurdly slow then even that would feel too long.

I really loved Fullmetal at 52 episodes (2003 version) but I generally tend to feel like anything past 30 is super pushing it, FMA was a big exception to this rule for me.

12 episode flings are great to me because you can expect a good pace and a rollar coaster-like ride of emotions (or action) because of the semi-brevity of the show, ~25 to me is perfect. Just enough time to wave all the right flags to make for an epic, tightly woven series.

Bleach, OP, Naruto, and to a degree Fairy Tale...listen I get that they are popular (with millions of teenagers mostly) and they sell like no other anime (to teenagers), but these anime to me are the fast food of good Japanese animation. They just keep making more and more because they suck in all the money, there's no artistic dignity in any of these series really...they just want to keep you watching and buying the stuff. One of easiest ways to gauge a mark of a shows mastery is in how they can create a perfect story and end it. An anime with no end in sight is analogous to me as a book with endless pages...I would never read it.

Look mah friend, I'll give you a really useful advice... Don't take it as a tedious obligation, just seat, use your computer, open the episode and enjoy! and I know... I would say I think anything over 150 episodes is overkill but then again I really like Gintama so it would make me a liar.
Though I would say I can only manage it with Gintama due to its very episodic nature.

For a Shonen action series with an overarching plot I think anywhere from fifty to just over a hundred episodes is an ideal length.

The thing that some anime forget I think or just choose to ignore is that the best stories have a BEGINNING, a MIDDLE, and an END! That last part is important and the pacing must be acceptable between those parts. The longest show I have watched is Legend of The Galatic Heroes and that was 110 episodes. It felt like the upper limit to me.

So yeah I think shows go on waaaaaaay to long and its an overall detriment to their lasting image. Sure it may rake in the money which is what drives most of the big shows anymore, but it doesn't make them a better overall anime to have 300+ episodes.

I don't think it matters to me, I just enjoy the story, which should be the point anyway. I've personally had some animes that I really liked and wished went on for another season or two, but have only had like 12 or 24 episodes.

One Piece has way too many episodes, and so does Hitman Reborn. And as much of a fan of Naruto I am, I would also like to say that the Original, and Shippuden has too many episodes too. Its mostly crappy fillers that that drags on for at least 100 episodes total.

Saying there are too many Gintama episodes is like saying you have too much money. It doesn't make sense to complain, and you'll see why if you watch it, as other people have said. Each episode is a beautiful golden cake that only adds to the total enjoyment experienced.

Obviously this doesn't apply to Naruto though.
