pinoy all time paboritos..cHicKen p0rk AdoBo!

Here are the ingredients you will need:

1 kg pork (cut into cubes)
1/2 kg chicken (cut into cubes)
2 pcs. potatoes (cut into cubes)
1/2 cup Soy sauce
1 clove garlic (chopped)
½ onions (chopped)
1 pc ginger (crushed)
1 pack laurel leaves with seeds
1/4 cup vinegar
1 cup water
1 tbsp salt
1 tbsp sugar
1 tsp black pepper
1 tbsp olive oil
2 cups lemon juice
1 small can pineapple tidbits

Procedure:

1. Pre-heat the frying pan on high heat.
2. Put the oil on the very hot pan.
3. Put garlic, onions and ginger to the hot frying pan.
4. Saute pork and chicken until it turns light brown on medium heat. Mix the pork and chicken well for evenly cook. To reduce fat, you can saute the pork first and let the fats dissolve. Remove excessive oil from the frying pan (saturated fats are not good for our cardiovascular health).
5. Pour lemon juice and pineapple juice from the can and let it boil for 5-10 minutes, but don't let it dry out. The pork and chicken will absorb the taste of the lemon and pineapple, and will make the meat tender. Adding more lemon juice only improves the taste, in my opinion.
6. Pour water, vinegar,potatoes, pineapple tidbits, whole laurel leaves with seeds and soy sauce, and then simmer it for 15-20 minutes on medium heat with constant stirring.
7. After 15-20 minutes, add black pepper, salt and sugar to taste.
8. Serve your Filipino adobo in a bowl. Servings are good for 3-5 persons.


*masarap sya sa kanin..and if you want you can add a hard boiled eggs (chicken or quail) para madami..

ang walang kamatayang Sinigang na Baboy
(Sour Soup Pork)


you will need:

500 gm boney pork (liempo ang the best para sa akin)
3-4 medium tomatoes kamatis - sliced (optional)
1 big onion - sliced
1 Tbsp sea salt or so… yung iba nilalagyan na lang ng patis.
1-2 green chilis siling pangsigang - pointed ends cut off (palot kung tawagin sa probinsya namin)
6-8 cups water (depends sa iyo kung mahilig ka sa sabaw)
souring agent sampaloc ( tamarind puree the old passion way)
1 bundle of string beans (sitaw) - cut into 2 inch pieces
2 taro roots (gabi) - peeled and quartered
1 bundle of kangkong - washed and plucked from stems (talbos ng kamote pde rin)
1 piece radish, sliced thinly (optional)


Procedure:
Boil pork in water with salt till tender.
Add taro, radish and sitaw. Bring to boil and simmer until taro is almost cooked (about 5 minutes).
Add the souring agent and kangkong. Cook for 3-7 minutes. Taste soup and adjust seasonings according sa lasang gusto mo!
Then, ayos na..chibug na..


*btw there two kinds of sinigang when it comes to baboy

this one is liempo

this one is buto-buto

pareho lng ang paraan ng pagluto..or if you want you can mix the liempo and buto-buto..the best yun..

Ginataang Kalabasa Recipe
(Squash Cooked in Coconut Milk)



Estimated cooking & preparation time: 1 hour



Ginataang Kalabasa Ingredients:

1 kilo squash, cut into cubes (1"x1")
1/4 kilo shrimp, shelled and deveined
3 pieces tomatoes, diced
2 onions, chopped
1 head garlic, minced
2 tablespoons of ginger root, crushed and minced
4 tablespoons of cooking or olive oil
2 pieces long chilli peppers
2 tablespoons of shrimp paste (bagoong)
2 cups coconut milk
1 cups coconut cream (katang gata)
2 cups chicken stock
2 tablespoons of fish sauce (patis)

Ginataang Kalabasa Cooking Instructions:

On a big pan, heal oil. Sauté garlic, onions until light brown then add ginger, cook until onions become translucent.

Add the tomatoes, squash, chicken stock, shrimp paste and the coconut milk. Let boil then simmer for 10 to 15 minutes or until the liquid has reduced and the squash becomes tender.

Add the coconut cream, long chilli peppers and the shrimps. Bring again to a boil and simmer for a few more minutes.

Serve hot with plain rice.

Ginataang Kalabasa Cooking Tip:

This ginataan recipe can be used on any vegetable, combination of vegetables, fish or meat.

Tinolang Manok
(chicken ginger stew)


Ingredients:

1 kilo chicken, cut into serving pieces
or (any choice cuts of your liking like thighs, drumsticks or wings)
2 cloves garlic (crushed)
1 onion (sliced thinly)
1 inch ginger (cut into strips)
3 tbsp. oil
1 tsp. crushed black pepper
3tbsp. fish sauce (patis)
5-6 cups of water or (rice water 2nd wash if available..mas masarap pag eto ginamit)
2 tsp. salt
1 unripe papaya or 3pcs. of sayote cut into thick slices
1 cup young leaves of chili or malunggay leaves


Procedure:

1. In a wok fry ginger, garlic, and onion till fragrant.
2. Add in chicken pcs., fish sauce and pepper saute for 3 min. till chicken is well coated.
3. Add papaya or sayote, mix well with the chicken.
4. Add the water , covered and continue simmering until chicken and vegetable are tender
5. Season to taste then add green leaves.
6. Let stand for a few minutes to cook the green leaves. Transfer to a serving dish and serve hot.



pagluto mo na si Nanay mo..at ng matuwa naman sya sayo..sigurado may bonus allowance ka pag ginawa mo..^^



if you want it hot and spi..add chili!!

DINUGUAN (BLOOD STEW)

Ingredients:

1/2 kilo pork (diced)
1/8 kilo pork liver (diced)
1 small head of garlic (minced)
1 small onion (minced)
2 pieces laurel leaves
3 tablespoons oil
1/2 cup vinegar
3 tablespoons patis (fish sauce)
2-cups stock
1-cup pig blood (frozen)
4 long green peppers
2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon black pepper

Instructions:

1. In a pot, simmer pork for 30 minutes and remove scum
that rises to the surface. Keep stock.

2. In a casserole, heat oil and saute garlic and onion
for a minute.

3. Add in pork, pork liver, laurel leaves, patis, salt
& pepper and saute for another 5 minutes.

4. Add in vinegar and bring up to a boil without
stirring.

5. Lower heat and allow simmering uncovered until most of
the liquid has evaporated.

6. Add in stock and allow simmering for 5 minutes.

7. Add in blood, sugar and long green peppers.

8. Cook for 10 minutes more or until consistency
thickens, stirring occasionally to avoid
curdling.

9. Serve hot with puto pero i prefer rice.

Okay deserts tau.. Mga easy to make deserts muna gagawin natin... Marami pa kcng preparations kung cakes...

LECHE FLAN

Ingredients:

8 egg yolks
1 can condensed milk
1 1/2 cup of evaporated milk
1/2 tsp vanilla
1/2 cup sugar
1/2 tsp lemon rind

Instructions:

Melt sugar in the pan over low heat.
Spread the carmelized sugar evenly on the bottom and the sides of the pan.

In a bowl beat egg yolks.
Slowly add the evap milk and condensed milk to the eggs.
Stir, add lime or lemon rind and vanilla.
Mix.
Pour mixture on the pan.
Place the pan on a larger shallow baking pan containing hot water about halfway up the sides of the pan with the mixture,

Preheat oven to 325*F.
Set pan on the middle rack.
Bake for 1 1/2 - 2 hours ot until knife inserted on the middle comes out clean.

Let it cool at a room temperature.

Chill and serve cold.

You need several of the following ingredients. You don't have to have all of them, but for the ultimate halo-halo, everything is important.

-prepared ube (purple yam)
-canned or sweetened jackfruit
-sweetened or ripe diced fresh bananas
-ripe mango, sliced
-cooked tapioca (perhaps soaked in brown sugar syrup)
-sweetened garbanzo beans
-sweetened monggo beans
-milk flan (leche flan, with the caramel sauce)
-nata de coco (preserved sweet coconut)

-rice crispies or pounded sweetened rice
-agar-agar gelatin (sea kelp gelatin) or firm gelatin (made with reduced liquid)
-Cream of Corn or corn kernels
-vanilla ice cream
-Sugar to taste (remember, almost all of the ingredients are sweet already)
-milk: evaporated (recommended)

-Shaved Ice or Crushed ice (Very Important)
-Ice cream scoop
-Tall glass or bowl
-Long tea spoon
-Small Plate to set the glass on and serve
-Patience while mixing everything together

Kalderetang Baka:
Ingredients:
1 kilo beef (for stewing, cut into chunk cubes)
½ kilo beef liver (cut to the same size as the beef
6 cloves garlic (minced)
2 medium onions (diced)
2 big tomatoes (quartered)
2 big red peppers (diced)
2 big green peppers (diced)
2 cups pitted green olives
2 pieces chili pepper (minced) 1/2 cup olive oil
2 tablespooons tomato paste
¾ cup all purpose cream
¾ cups grated cheese pinch of salt & pepper to taste
3 cups beef stock
1 ½ teaspoon cornstarch in little water
Procedures:
1. In a casserole, saute garlic, onion, tomatoes and all the pepper.

2. Add in the beef and the liver. Cook for a little while and take out the liver and set aside.

3. Pour in the stock and tomato paste.

4. Bring to a boil and lower the fire and let simmer until beef becomes tender.

5. Season with salt and pepper.

6. Add in olives, and diluted cornstarch.

7. Grate liver and add into the mixture.

8. Allow sauce to thicken and add in cream and grated cheese.

9. Serve hot..saraap!!!

10. if you want is spicy..just add chili..yummy!!!!
