1 cup rice, washed and drained
5 to 6 cups water
1/4 tsp. salt
1/2 cup sugar
6 tbsp. cocoa or 2 squares melted unsweetened chocolate
cream or milk

--------------------------------------------------------------------------------
Combine rice and water in a pot and bring to a boil. Reduce heat and simmer for 20 minutes.
Combine sugar, salt and cocoa or chocolate. Add to simmering rice and stir until well blended. Cover and cook for 15 minutes more. Stir occasionally
Serve with milk or cream.

TORTANG TALONG

Ingredients :

250 g. of ground lean pork
1 tbsp. of finely minced garlic
1/2 c. of finely chopped onions
3/4 c. of coarsely chopped tomatoes
1 bell pepper, finely chopped
4 eggs, beaten
1 tbsp. of flour
4-5 talong (eggplants)
salt and pepper
cooking oil

Cooking procedure :

Mix together all the ingredients except the eggplants and the cooking oil.

Cook the eggplants (boil, steam, grill or broil) until soft but not mushy. Peel off the skins, leaving the stems intact. Using a fork, flatten the meat of the eggplants. Divide the pork mixture into as many eggplants you prepared. Place the mixture on the flattened eggplants, patting the meat to make sure it is compact.

Heat a skillet or wok. Add about 2 tbsp. of cooking oil and heat until smoking. Carefully slide one stuffed eggplant onto the hot oil. Cook over medium-high heat, about 5-7 minutes on each side or until golden brown. Add more cooking oil as you cook a new eggplant.

Serve with catsup.

If you want a really special tortang talong, lay a slice of cheese on the flattened eggplant before adding the pork mixture on top.

MENUDO


INGREDIENTS:
1 kg pork tenderloins , cubed
3 medium potatoes , cubed
2 medium carrots , cubed
1/2 cup raisins
1 medium red bell pepper , diced
1 medium green bell pepper , diced
500 ml tomato sauce
100 g liver spread (originally, we use fresh pork liver but since it's very difficult to find a good liver, I substitute)
1 medium onion , chopped
2 garlic cloves , chopped
50 g romano cheese (Parmesan is also good)

MARINADE:
2 bay leaves
1 cup Sprite (Yes, Sprite.)
4 tablespoons soy sauce
2 tablespoons lemon juice
1 lemon, zest of , only
to taste ground black pepper


DIRECTIONS:
1. Combine all marinade ingredients. Divide the marinade in halves. Save half. Add pork cubes on the other half with the bay leaf and marinate for at least 30 minutes.
2. Remove pork from the marinade, drip dry.
3. Sauté garlic and onion, add pork and the unused half of the marinade and bay leaf, simmer uncovered, reduce the liquid to half.
4. Add fresh pork liver if you prefer the fresh ingredient, cover and cook.
5. Add tomato sauce, liver paste (if this is what you're using), carrots, potatoes and raisins, simmer stirring occasionally.
6. Add peppers and adjust the seasoning.
7. Add the grated cheese, let it melt, stir and distribute evenly.
8. Serve hot.

Bibingka Cassava

Ingredients

* 1 kilo cassava roots or kamoteng kahoy (grated)
* 4 cups coconut cream
* 2 cups white sugar
* ¼ cup melted butter or margarine
* 2 whole eggs
* dash of eggs yellow food coloring(optional)
* topping

METHOD

Beat eggs slightly. Add to all ingredients. Mix well until well blended.Pour into a grease pan, lined with banana leaves (greased). Bake a preheated oven at 340 for 20 minutes. Pour topping on top, continue baking for 15 minutes or until topping golden brown.

Toppings.

* 1 can (big) condensed milk
* 1 cup thin coconut cream
* 2 tbsp. Flour

Dissolve flour in ¼ cup of the coconut cream before blending with condensed milk and the rest of the coconut milk. Cook in medium heat stirring constantly until it thickens.
