On topic, I can see what you're trying to say and that might be a reason for some characters looking the way they do. But I still think that these characters have these particular features because they are supposed to be more relatable to the target audience. Sure there are the occasional characters with different colored hair but they are few and far between.

Negi is pretty much the only pure white harem protagonist I know of, his father being an Englishman and his mother some princess/queen of an ancient magical kingdom, The sad thing is though, that in anime form Negi is a loser, but if you read the manga, especially starting with the magical world arc you see just how cool he gets. He basically becomes a demon in order to get strong fast. He also becomes a lot more aggressive, primarily due to all the crap Fate put him through. Anyway the magical world arc is a masterpiece of shonen manga, and everyone should read it.

Cinq from Dog Days is half Japanese, but he has got blonde hair and blue eyes, I know at least 5 chicks that like him, I'm sure that constitutes a harem

As for my personal favorite Harem lead, I have to say Akatsuki from Hagure Yuusha, no other main character is at the same time a bad ass, sexually harrasses women, and gets away with it.

My least favorite is Kyosuke from Oreimo. Yes I like Makoto from School Days better than Kyosuke, at least Makoto was nice enough to allow you to build your hate for him slowly so you were completely justified in your anger, Kyosuke just does annoying crap out of the blue after acting like a nice guy for most of the series.

TOO MANY PICTURES

IN addition, I tend to call him the "blue haired generic guy" who's really nice and gets all the girls but usually picks one.
Then you have Generic Brown Haired boy, his brother. He's generally shorter, more justice and hero inclined, has badass powers, and will keep the harem despite whatever he does.

Both are tend to weaker and stronger moments. Clannad's Tomoya managed to be the perfect generic Blue haired guy, while Issei from Highschool DxD managed to be the perfect Browned haired version. My own opinions aside, they tend to be generic yet stand outish here, while most others fail.

Then you have the extreme outliners, like Keima from The World God Only Knows. He manages to be quite the hell of a character who, as part of the plot, Actively chases the girls in a romantic fashion with ulterior motive. It makes the show far more interesting and both forces him out of the "pick one" scenario while giving a wide range of girls to pick your favorites. It's also done for laughs half the time, and that's something!

The more powerful your hero is, and the less nerdy, the more likely he's a generic douchebag nice guy hero. Being a hero is one thing, being a hero who's the Krillin of the group is another(Issei I lookin at you)

Another good tell is the Generic Guys motive. Is he blindly following the group? Perhaps with a slight "my goals are the same as hers but I did nothing about it" mentality? (Kodoka form Haganai I'm staring at you Generic guy with ungeneric hair)

THEN we have B Gata H Kei's Kodoka...or what his name is. He's designed to be as bland, boring, unmodivated, and lame as every other Generic Harem lead, BUT there is a twist! The show's comedy and plot is all about Yamada, the female lead who's constantly trying to get laid with this lazy ass mofo. It makes fun of the genre while doing it better than most!

Koyomi Araragi's my favorite, hands down. Sure, his personality is largely what you'd call 'the usual' for a harem protagonist, but like everyone else in the series he's in, he does ridiculous stuff for the sake of comedy or just plain weirdness, like he knows he's an anime character or something. Whereas most of the other characters seem to be strange just because, well, they're strange, Araragi's weirdness comes from absolutely nowhere most of the time, so the idea that he's thinking from a metafictional perspective is very pronounced, and that's what makes him great.

About harem protagonists in general, I tend to think they're decent characters with potential that usually doesn't get explored. The ones I tend to like best are the ones that I can't relate to. Araragi's an exception, as his apparent meta outlook is something that appeals to me no matter what type of character it shows up on, as it's directly tied into my own interests and worldview. But generally, the blandly helpful, slightly immature, and doggedly persistent 'blue haired guy' is presented as too much of a viewer stand-in to be interesting. I want a character, not a pointless self-insertion. The best protagonists are the ones with notable personalities that actually develop over the course of the piece. I do, however, have a hard time liking the ones who knowingly play with the emotions of their cast-mates. Generally speaking, trying to maintain the harem will earn only my disapproval. The sad thing is that usually, when the protagonist is not of the 'blue-haired nice guy' variety, they fall into the next most common harem protagonist archetype: the shameless playboy. When it comes down to it, I'd rather the nice guy over the playboy, but neither of them is really satisfactory, so finding a harem protagonist that both feels like a character and is not a remorseless jerk is pretty rare.

My problem is more with the genre itself than with the protagonists, since I have what you could call an 'old-fashioned' view on romance. I'm the type who, if tossed into a harem situation, would turn down everyone right away just to get out of all of the hassle and emotional/ethical muck that comes with it. Visual novels are a far better medium for that kind of story than anime, in my opinion, since typically, each romance exists on its own. There's no fighting over the protagonist: the relationship develops normally, the chosen character's problems are explored, and none of the others are involved romantically. Then you start the whole thing over and aim for another route: completely self-contained. The problem with the protagonists still exists, but it feels more like a natural love story rather than a suspension-of-disbelief-straining love dodecahedron.
