So I downloaded the xbox app and got my free 30 day trial and I have to say, there is no good anime at all in the app.
Bleach isn't here, Death Note isn't here, Soul eater isn't here, Mirai Nikki isn't here,....
In total there are something around 30 anime.... is this normal or am I missing something?
EDIT: Settings are on "Show mature content" (I highly doubt bleach is mature content though)

Bleach should be there. Death Note, Soul Eater, and Mirai Nikki aren't licensed by Crunchyroll.

A-Z of Crunchyroll's Anime

Most--if not all--of these should be on the app. Double-check to make sure that mature content settings are indeed enabled, and then make sure to restart your console and try again. If that doesn't work, you may want to consider trying to delete the app and then re-installing it.

You, my friend, must not be in America...or am I wrong? O.o

Bleach appears on that list for me.

Belgium has a significantly less variety of anime than America does, because of licensing costs in comparison to the amount of people who will actually watch the anime over there.

I'm sorry about that.

From what I could find, at launch the regions for Bleach were:

North America (US, Canada, Mexico), the Caribbean, Central and South America, the United Kingdom, Ireland, the Netherlands, Sweden, Denmark, Norway, Finland, Iceland, Australia, New Zealand, and South Africa

The remaining titles you mentioned are licensed by U.S. video distributors that handle their own streaming. Death Note is licensed by Viz, while Soul Eater and Mirai Nikki (Future Diary) are licensed by Funimation.

If it makes you feel any better, there is at least one title you will see on your list in Belgium that people only there, France, and Switzerland can see.

Oh, well there goes my hope for watching all my favorite anime in 1080p on my xbox.
Do you know any alternative sites/services where I can watch crunchyroll quality videos but with a wider variety of videos?

I don't know of any other legal service that would be available in Belgium, other than perhaps KZPlay, but I doubt they have a 360 app. On the 360, even illegal sites would be out unless they used a host that streams using HTML5 video.

A VPN or proxy service could make you appear to be in the U.S.. That would allow you to access other services, but for the 360, you would probably need a router that would support such a service, and the ones that have decent enough performance for video typically have a monthly fee.

FYI, the streams for the XBOX actually top out at 720p.

I know that many Crunchyroll series blocked in France are blocked in Belgium and Switzerland as well, but I don't know if it works the other way around ... whether Belgium is normally included along with French licenses.

But just in case, look at this rundown of French licensees that also do streaming (its a longer list, but the French licensees are collected together). If you have the DailyMotion app working on your XBox, Dybex is reported to stream their new series (before DVD release) on Dailymotion.

Its unlikely any of them are available at Crunchyroll quality, since all of them are primarily licensors for home video and/or a cable channel.

Looking at the list of licensors, you'll see why Crunchyroll's availability in Belgium is limited compared to Scandinavia or Spain/Portugal ~ there is a lot of competition in the French market for licenses, and unlike Sentai and Aniplex in the US, the French licensees don't tend to sub-license their streams to Crunchyroll.
