I've used these for my non-anime friends (35+ crowd) with good results:

Ghibli Movie (starter movie I'd pick would be "From Up on Poppy Hill")
Nana (story and art style introduction)
Yamato 2199 (for those of us who were old enough to remember Star Blazers when that first aired)
Kids on the Slope (Music appreciation and gorgeous animation/story)
xxxHolic (supernatural with a strong anime feel and distinctive art style)
Chihayafuru (Sports anime sprinkled with romantic undercurrent without going overboard)
Time of Eve - Short but heady Sci-Fi
Azumanga Daioh - example of Slice of life.. but I wait for one of the other shows to hook them into anime first. Then I bring on Lucky Star

Gurren Lagann, Haruhi Suzumiya, Death Note, and Durarara. also, Black Lagoon, which has probably one of THE BEST english dubs I've heard in a long time.

Seto no Hanayome after watching that, you wont even have second thoughts about anime anymore, especially if it was your first xD!

Haha but really it is a great anime to start with, I did, and have never regretted it. I don't naming anime's as great as Code Geass, Clannad or Cowboy Bebop are great anime's to start with, because if you watch one of them, you only get way to high expectations when watching anime, of course this will go down as you progress, but a first timer you should never do this, because they are, for the most part very skeptic about anime..
But for a lover of anime sure, those are great ones to recommend *Still... Watch Seto no Hanayome, if you don't like it... You have no heart! >:( </3 :L *

I am not going to repeat any of the suggestions, because I agree with most of them.

Myself;Yourself- When I first watched this anime, I quit after the second episode because of how dull the show was. However, after getting back into the show, it demonstrated that it really is a piece of animated work that everyone should watch. The issues and scenarios in the show were believable, and demonstrates values such as friendship and family, without rubbing it in your face.

I also agree; Grave of the Fireflies was the first and only anime to make me bawl like a little baby.

Infact all of the Ghibli films should probably be seen atleast once.

Edit:

In my personal opinion I think Clannad and Death Note should be seen just to clearly show the differentiation of anime.

Required, huh? I'd go with...

Grave of the Fireflies
Akira
Dragon Ball
Sailor Moon
Haruhi Suzumiya
One Piece
Mobile Suit Gundam
Neon Genesis Evangelion
Cowboy Bebop
Full Metal Alchemist
Naruto
Ranma 1/2
Barefoot Gen
Megazone 23
Dallos
Trigun
Project A-Ko
Bubblegum Crisis
Azumanga Daioh
Lupin III Castle of Cagliostro
Doraemon
Detective Conan
Dirty Pair
Galaxy Express 999
Astro Boy
Kimba
Slayers
Spirited Away
Attack on Titan
Speed Racer
Battle of the Planets
Space Battleship Yamato
Robotech/Macross
K-On
Rose of Versailles
Nadia of the Secret Blue Water
Tenchi Muyo!
Otaku no Video
World Masterpiece Theater
Daicon IV Opening Animation

Those are mostly based on what I perceive as works that either had an impact on their genres or the industry as a whole, or had a notable impact on the fandom.

Ghibli, Cowboy Bebop and FMA are obvious picks. Serial Experiments Lain, Texhnolyze, Ergo Proxy, Samurai Champloo, Haibane Renmei are also classics I would recommend to anyone. But you can really see my tastes in those choices.

Any list with Cowboy Bebop in it should also include Samurai Champloo. They're sister shows. They both have really solid english dubs as well.. I agree with those who say it is a bad pick for introducing people to anime because it's hard to find shows as good as these.

To be an anime fan you aren't required to watch anything specific but there will always be what are considered "classics".
