Dragon Ball - All action anime
Sailor Moon - Magical Girl anime
One Piece- Adventure anime
Gurren Lagann- Mecha anime
.Hack series- Virtual World anime

there are more but off the top of my head i think these currently have the biggest impact in respective genre atm

Of course, I would recommend Steins;Gate to all., but...

...I feel there is no required anime, not really...

Just watch what you like, or what you think you'll like.

Mandatory anime are the series that leave a long lasting impact on the medium. There are too many series that do not have the impact and can get mixed in with the rest. Even good series are not really things I would call essential viewing material. I will list only a HANDFUL of series that I think everyone interested in anime at all should watch at least once. Actually, there are more mandatory anime films than there are series. I will list those as well.

Anime Series
1. Cowboy Bebop
2. Ghost in the Shell
3. Neon Genesis Evangelion (I am not even a fan, but it is a series that should be seen at least once.)

Anime Films
1. Akira
2. Grave of the Fireflies
3. Jin-Roh: The Wolf Brigade
4. Princess Mononoke
5. Spirited Away

That is really it. DBZ is on the borderline for me to consider, just because of how huge an impact it had n the Shonen genre, though. So it can also be put in there, I guess.

Mecha w/ Earth vs Space Gundam

Sociological and action: Psycho Pass

Thriller (Mind Freakingly Amazing): Monster

Gore: Attack on Titan

Comedy/Parody: Lucky Star

Hip-hop influence and History: SAMURAI CHAMPLOO!!!!!!!! (Nujabes RIP)

Harem w/ Best Dialogue, animation style, and comedy: Bakemonogatari, Monogatari the Series 2nd Season

Militarism: Full Metal Alchemist and FMA: Brotherhood.

Geopolitical climate/Conspiracy: Ghost in the Shell (ppl say it is boring, but its a very great anime)

Chaos/Random: FLCL

About a Genre of Videogames: Sword Art Online

I didn't name DBZ since many have already mentioned it. Naruto although i'm not a huge fan for it lacks many things that short series have done a better job of showing or actually showing, BUT it has made a huge impact in the Action (ninja) genre and deserves its place. One Piece for its random, chaotic action and adventure, even if it too lacks things that shorter series have accomplished, but it is an entertaining show.

Those that provide some of the best combinations of different genres:

Rurouni Kenshin: A definite must see.

Fullmetal Alchemist: The first one.

One Piece: Probably the biggest combination of genres.

Code Geass or Gurren Lagann for Mecha.

Steins;Gate for slice of life (easily the best sci-fi slice of life anime).

1) Now and Then, Here and There

Reason: Takes a good in-depth look at issues that affect many people in the world today. Shows that anime can convey a strong issues in a meaningful way

2) Death Note

Reason: A good look into the psyche of people

3) Macross Frontier

Reason: Great animation, Great music, a major character dies [Mikhail] (and is not brought back to life) which shows that in not every anime you just need some dragonballs (or other widely outrageous stuff) to come back to life. This anime has a positive uplifting message as well..
